The global bakery sector is undergoing its most significant shake-up in a generation. From the GLP-1 weight-loss drug boom to a viral social-media obsession with fibre, 2026 is pulling the industry toward products that are simultaneously healthier and more indulgent, more traditional and more innovative. For professionals at major International Bakery Exhibition events, these converging forces define the strategic agenda ahead.
1. The GLP-1 Boom — Every Bite Must Earn Its Place
GLP-1 medication use has nearly tripled in two years. In the UK alone, ~1.9 million adults now use these drugs, with 6.3% of households affected, cutting grocery spend by an estimated £780 million. David Cooper, president of ABIM, says it plainly: "Consumers taking GLP-1 want bakery products that deliver both on taste and functionality—added protein, increased fibre or slow-release carbohydrates. Every bakery item must justify its place in the shopping basket." Mike Bagshaw (I.T.S) adds that eating is becoming "more functional, mindful and less reward-led," driving demand for lighter, protein-rich, nutrient-dense snacks.
2. The Viral Power of Fibre
"Fibremaxxing" has pushed fibre to the top of the agenda. Per Innova Market Insights 2026 data, fibre has overtaken probiotics as the leading digestive health claim in new launches. Simon Atkins notes wholegrains, rye, oats and seeds—already bakery staples—make the sector a natural fit. But Dawn Foods' Jacqui Passmore warns that fibre-enriched flours need extra support for gluten development, eating quality and shelf life. Fibre is now a mainstream expectation, not a niche claim.
3. Protein's Mass Appeal
Protein has migrated from the gym aisle into everyday bakery—flapjacks, snack bars, even sweet treats now carry a protein or fibre boost. Bagshaw sees flavour houses as central to masking protein notes and restoring indulgent dairy/buttery character in reduced-sugar recipes. Cooper notes sweet bakes can align with GLP-1 habits through protein or fibre enrichment.
4. EU Traditions Meet Authenticity
Sourdough, heritage breads and ancient grains (emmer, einkorn, rye, spelt) are back as consumers seek provenance and craft. Atkins points to PGI products like Pane di Matera and Finland's rye breads as proof tradition thrives alongside modern sustainability—circular production and reduced food waste. "Tradition and progress are not opposing forces," he concludes.
5. NPD, Premiumisation & Texture Mashups
Fewer eating occasions, bigger experiences: nostalgia meets premium. Waitrose's strawberry dessert and M&S "cone ends" show eye-catching design drives social buzz. The real frontier is texture—Gen Z wants crisp, creamy, chewy contrast in every bite. Per IRCA Group's Food Trends 2026, multi-sensory layering is reshaping sweet and savoury innovation alike.

The winning 2026 formula holds contradictions in balance: a protein- and fibre-boosted, sourdough-fermented loaf in a portion-controlled format that also photographs beautifully. Invest in fibre/protein formulation, explore functional formats, lean on European heritage for authenticity, and never underestimate texture and visual appeal.
